Measuring
Meat and fish are measured by weight in this book. All other ingredients are measured by volume using cup and spoon sizes. When appropriate, an approximate weight or size description has been included. If there are leftovers, seal them in airtight container and save them for later use.
Chopping, Dicing, and Mincing
Always use a sharp knife when cutting. To chop is to cut into multiple pieces of size. To dice it to cut an item into symmetrical uniform pieces usually in a cube shape. Dicing is important with ingredients that are going to be cooked because it helps ensure even doneness. In this book mincing is used for garlic. We recommend a coarse mince to prevent garlic form burning during cooking.
Seasoning with Salt
We know a cook who added salt to her coffee grounds. And we know others who effuse to even add one grain of salt to their food because of a fear of sodium. Both of these are extremes. Salt is an essential ingredient because it adds flavor. We use kosher salt and highly recommended that you use it also. IF you prefer not to use kosher salt substitute table salt, using ˝ teaspoon table salt for every 1 teaspoon kosher salt.
Preparing Rice
Every recipe that includes rice requires warm cooked rice. The most convenient method for having warm rice on had it to use and electric rice cooker. If you use the conventional sauce pan method, always check the coking time of the rice before beginning the recipe to ensue perfect timing.
When cooking rice in a sauce pan or pot, be sure to use one large enough to hold the rice in a shallow layer. When too much rice is cooked in a small pot, it tends to clump together. For the best results, cook each type of rice according to the package directions.
For sake of convenience, rice can be prepared and reheated when needed. To do this, place cooked rice in a nonstick or saucepan large enough to hold it in a shallow layer. Sprinkle the rice with a couple of tablespoons of water until moist. Cover with a lid and cook on low heat until rice is hot, 5 to 10 minutes. Or place in a microwaveable container and cook on high heat 1 to 2 minutes; stir, check heat, and continue to cook until hot.
Wrapping
With practice comes perfection. The first few times you wrap the tortilla around the filling may feel a little like squeezing into pants that area size too small. But don’t worry – after a few attempts, you’ll get the hang of it.
The first step to wrapping is warming the tortilla to loosen the oils that it doesn’t tear. Extremely fresh tortillas that have a generous fat content are quite pliable but even these tortillas can easily tear when being folded. Warming a tortilla can be accomplished using a variety of methods.
